As soon as the weather starts warming up each Spring, I get pretty excited for Summer and start thinking of all the summer-y recipes I want to make. Pina Coladas have always been one of my favorite summer beverages, but the ones you order from restaurants are filled with a lot of completely unnecessary ingredients. Thankfully, you can still enjoy a delicious pina colada without any harmful ingredients.

Though not low in calories by any means, this recipe contains only natural, whole ingredients. Eating well is about indulging mindfully! Plus, you’ll be getting the many benefits of fresh pineapple, which include:

🍍 Pineapple contains bromelain, which is often taken in supplement form to promote gut health and reverse inflammation.⠀

Recipe
(Serves 2-3)

Note that canned coconut milk should be stored in the refrigerator for at least 24 hours before using it for this recipe. This will ensure that part of the coconut milk separates. Part of it will ‘harden’, which is important here.

  • 1/2 cup canned coconut milk (liquid part)
  • 1/2 cup almond milk
  • 1 cup frozen pineapple chunks
  • 1/4 cup fresh pineapple
  • 1/2 teaspoon vanilla extract
  • 1 scoop Collagen Peptides (doesn’t change the taste or texture!)
  • 5-6 ice cubes
  • 1 and 3/4 cup mango (preferably fresh)

Blend well. Top with roasted coconut flakes and enjoy! Feel free to add some coconut rum to this if you wish to add alcohol.

Tip: If you have any GI issues or conditions, I recommend choosing this ‘Simple’ Coconut Milk, as it does not have any thickening gums, which cause digestive stress for certain individuals.
